Paris 75017: gourmet break at the LM Bistrot du Méridien Étoile

Chef Hervé Chatrieux surrounded by his deputies, Sukhaline Coilliaux, Ilham Smir Djelloul, Billy Fanga

It was at the Méridien Montparnasse, now defunct, that Hervé Chatrieux, executive chef of the Méridien Étoile since 2019, began his career and acquired the fundamentals of the profession of chef. He then worked in various renowned establishments, such as the Hôtel Montalembert and the Hôtel du Louvre. But it was at the Orénoc restaurant at Méridien Étoile, which subsequently became  : Ma Chère & Tendre ", that he took off as his right-hand man by chef Éric Brujan. When the latter leaves for Le Méridien Nice, he will succeed him, eventually supervising all of the establishment's kitchens. Although he is in charge of 7 points of sale (40,000 covers/month), and a team of 70 people, he provides particular care to the LM Bistrot nestled in the heart of the hotel.

On the menu, we find the titles of dishes with comforting, authentic and traveling flavors such as beetroot hummus with peanuts , salmon tartare, mango, cucumber, cashew nut tuile , Italian beef carpaccio , butternut ravioli, Brie de Meaux cream with rosemary , sea bass fillet, clementine coulis, risotto , braised beef chuck with spices, crushed potatoes and small vegetables , etc. Made with local products that celebrate the richness of seasonal ingredients, each creation offers local cuisine revisited with modernity. The desserts are in the same vein, Virgin mojito-style tart , vanilla sweetness and melting caramel , chocolate hazelnut dome and gluten-free fingers with exotic fruits . This is tasty and well thought-out simplicity, to be enjoyed, shared in a relaxed atmosphere
